We began sourcing honey on a foundation of extensive research into local, natural honey production. As we learned more about the honey industry, we were surprised at the spectrum of production methods and grades of honey on the market. Crucially, we found that the marketable phrase “natural honey” covers a broader range of practices than the special field of “wild honey” Rather than allowing their bees gather honey from flowers, some farms feed their bees syrup to increase their yield of honey. This produces honey that tastes sweet but compromises on its natural benefits. Other farms allow their bees to collect honey from a single plantation, limiting the flavours and nutrients in their honey to a particular crop.
In contrast to farmed honey, we offer you honey from the wild. Wild bee colonies visit countless varieties of bushes and perennials in their honey-making journey, and as a result, their honey is richly aromatic, with notes of all kinds of forest flowers and fruits. Additionally, we find that wild honey tastes beautifully mellow, rather than artificially sweet. Our honey is freshly squeezed from the hive, saturated in live enzymes that are like superfood to our bodies. If you notice a waxy, dark settlement on top of the bottle, don’t worry -- that’s the honey’s medicinal property. As for any bubbles, that’s from the live enzymes respiring inside. Just open the cap to release the air pressure.
